No-bake Coconut Apricot Balls

During this time of #stayhome, I am attempting to use up my pantry items to try and create both meals and sweet treats; these were so good I had to share with you. The jump off item was some dried apricots that were reaching their expiry date. Having searched ‘dried apricots’ in Pinterest (my go-to place for recipe searches and where I save some of my favourite recipes) this no-bake Coconut Apricot Balls recipe came up. I didn’t have walnuts as in the original recipe but I did have some dry roasted salted peanuts so figured I could replace the walnuts with them. In most Caribbean households you will always find a tin of sweetened condensed milk and I had some desiccated coconut leftover from the gizzadas (a Jamaican coconut pastry) I tried to make a while back so this recipe along with the method of ‘place all the ingredients in your food processor and pulse until well combined’ was perfect for a lazy Saturday morning. I actually used my NutriBullet instead of the food processor - super lazy!

Method

Place all of the weighed ingredients into the food processor/ Nutribullet and pulse until well combined (should be the consistency of a dough), about 30- 60 seconds.

Put the extra desiccated coconut into a bowl.

Empty dough onto counter, divide into approx. 20 balls and roll between palms to create sphere shape.

Roll each ball into the desiccated coconut to completely cover and place in airtight container.

Keep refrigerated until you are ready to eat them!

140g dried apricots

140g dry roasted salted peanuts

140g unsweetened desiccated coconut + extra for

200ml sweetened condensed milk

Tip: I often use my NutriBullet to make a whole host of things as well as smoothies. It is a great small kitchen appliance and saves me time and lots of washing up when creating small recipes such as American Pancakes, cocktails, houmous, nut butters and blended soups.
