Over the last year or so becoming a sustainable, environmentally-friendly business has been at the front of my mind. During the process of creating a show-stopping wedding cake there is so much packaging and consumables involved and I’ve tried to reduce this although it has been very difficult.
During this time of #stayhome, I am attempting to use my pantry items to try and create both meals and sweet treats; these were so good I had to share with you.
Since returning back from my trip to Jamaica last February I have immersed myself in lots of traditional cooking and rediscovering my roots through food.
Some of my earliest life memories are of being ‘back home’ in Jamaica. My grandparents came to England in 1961 along with many other British West Indians as they were then known.
